A few years ago Mimi Kirk won PETA's sexiest vegetarian over 50 - at age 70! Since then she has become an internet sensation, demonstrating raw food recipes and sharing lifestyle tips on Facebook, YouTube and her own website. In June, she released her own book "Live Raw."

    Ingredients

    Navy Bean and Dandelion Greens Salad Recipe

    4 cups cooked navy beans (or 2 16oz cans)
    1/4 red onion diced very small
    1 handful of minced dandelion greens
    1/4 cup prepared mustard vinaigrette*
    1 tsp salt

    Method:

    Mix all of the ingredients together well.  That's it.  It's more of an assemblage than a method. 

    Shaved Asparagus Pizza

        

    Makes 1 thin crust 12-inch pizza

    1 recipe pizza dough (see below)

    1/2 pound asparagus
    1/4 cup grated Parmesan
    1/2 pound mozzarella, shredded or cut into small cubes
    2 teaspoons olive oil
    1/2 teaspoon coarse salt
    Several grinds black pepper
    1 scallion, thinly sliced

    Italian Egg-Drop Soup

        

    Italian egg-drop soup, Stracciatella, is traditionally a light soup made with just chicken broth, eggs and herbs. Pasta, chickpeas and arugula to turn it into a meal.
