Flourless Chocolate Cupcakes

Here's a quick and easy dessert that will wow your guests whether they're gluten free or "full of gluten." This Flourless Chocolate Cupcake recipe is dark and rich. 

Makes 12 cupcakes

Ingredients
3 cups dark chocolate chips (73% cacao)
1 cup almonds
6 eggs
1/2 cup grapeseed oil
1/2 cup agave nectar
1/3 cup vanilla extract
1/2 teaspoon celtic sea salt (or just a pinch)

Method
Place chocolate and almonds in a food processor.  Grind until the consistency of coarse sand.  Pulse in eggs, grapeseed oil and agave.  Then pulse in vanilla and salt.  Spoon batter into cupcake tins lined with unbleached baking cups.

Bake at 350° for 12-15 minutes

Cool and frost with Vegan Chocolate Frosting (see below)

Vegan Chocolate Frosting
1 cupdark chocolate chips (73%)
½ cup grapeseed oil
2 tablespoons agave nectar
1 tablespoon vanilla extract
pinch sea salt

In a small saucepan over very low heat, melt chocolate and grapeseed oil.  Stir in agave, vanilla and salt.  Place frosting in freezer for 15 minutes to chill and thicken.  Remove from freezer and whip frosting with a hand blender until it is thick and fluffy.
