How to make Yogurt

Ingredients

1/2 gal. milk
4 tbsp. plain yogurt with live cultures

NOTE: Check the yogurt container to see if your starter yogurt contains live cultures- an absolute must in this recipe.

Directions:

In a large stainless steel saucepan, warm milk at medium heat to scalding; just short of boiling.

In each of 2 clean quart jars place 2 tbsp. of yogurt.

Divide milk between the two jars and stir.

Place the jars in a warm place (80 to 110 degrees). The incubation time will vary according to the temperature and the amount of culture in your starter yogurt. To keep it warm, you can try putting it in a thermos, wrapping it in a heating pad or putting in a gas oven with just the pilot light on. 

It should take from 8 to 16 hours to firm up. Test it by tipping the jar slightly. If it leaves the side of the jar and is thick, it is ready to be refrigerated. You can sweeten and flavor as desired.
