Tofu Burgers

I confess I rarely use a recipe when making burgers or croquettes. If you make your burgers without eggs you can taste the mix and add ingredients until it is seasoned to your liking. One time I actually kept track of what I did and the burgers were fantastic. Here is my recipe, but feel free to alter to your taste.

Tofu Burgers

2 blocks frozen tofu, thawed and shredded
1 med. onion, diced
2 cups mushrooms, diced
2 tsp. garlic powder
2 tsp. dried parsley
1 tsp. each oregano and basil
1 cup sunflower seeds, coarsely ground
1 cup walnuts, coursely ground
1/2 cup gluten free rolled oats, coarsely ground
1 tsp. sea salt
2 tbsp. tahini
4 tbsp. ketchup
Egg Replacer for 3 eggs- powder only

Sauté the onion until soft then add mushrooms and cook until mushroom soften. Then just mix everything together in a big bowl - it actually works best if you use your hands.  Squeeze a handful into a patty. Make 18 burgers.  I like to fry them in a pan to get the outside nice and crisp, but I am guessing you could spray them with olive oil and bake them, too.

If you have trouble forming the patties- try adding breadcrumbs or more oats or more tahini.
