Tofu Falafels
No- they are not exactly falafels…you don’t even fry them, but you serve them the same way…in a pita with lettuce, tomato and yogurt dressing.
Ingredients:
1 small onion, minced
2-4 cloves garlic, minced
olive or sesame oil
2 lbs. tofu, squeezed in a clean tea towel to remove excess water
1/2 cup sesame seeds
1/2 cup bread crumbs
2 tbsp. tahini
2 tsp. cumin
2 tsp. tamari
1 tsp.salt
Saute the onion and garlic in a bit of oil until they soften. Mash tofu (I do this with my hands, but I guess you could use a potato masher). Add remaining ingredients and the sauteed onion and garlic and mix well. (Your hands are already a mess, so go for it!) Mixture should hold together when squeezed.
Make into balls and flatten them slightly. Brush them with oil and place on large baking sheet or pan. Bake in preheated 350° oven for 30-40 minutes, until lightly browned, turing over half way through.
